To make Lemon Cardamom Crescent Milk Rolls with Poppy Seeds, you will need the following ingredients:
In a large bowl, whisk together the flour, sugar, yeast, and salt.
In a medium bowl, whisk together the milk, butter, and egg.
Using an electric mixer, mix wet and dry ingredients for a few minutes until well combined.
Transfer the dough to a work surface and use your hands to knead the dough for a few minutes until soft and smooth. Roll into a ball.
Place ball in a well greased bowl, cover with a tea towel and set aside for 70 minutes, in a warm place to rise until it has doubled in volume.
In a large bowl, using an electric mixer to beat butter, lemon zest, sugar, and cardamom until fluffy.
Line 2 baking sheets with baking parchment paper.
Once doubled in size, remove the dough, punch down and knead for another 30 seconds.
Divide the dough into 10 equal portions and roll into smooth balls.
On a lightly floured surface, using a rolling pin to roll out each portion in 8-inch triangle shapes, about 5-inches wide at the base.
Spread a thin layer of the lemon-cardamom butter onto each triangle then starting from the base, roll each triangle up towards the tip. Bend rolls into crescent shapes, tucking the pointy tips underneath to prevent opening during baking. Reserve remaining filling for serving.
Transfer to prepared baking sheet, cover with a kitchen towel and set aside in a warm place for 20 minutes to rise again.
Preheat oven to 425 °F.
In a small mixing bowl, whisk egg yolk and water until combined then brush over the tops of the crescent milk rolls. Sprinkle with generous amounts of poppy seeds.
Bake one sheet at a time for about 11 minutes until golden.
Serve with remaining butter filling.
