Ready in a little less than one hour and a half, this recipe is pretty easy to make. Just preheat the oven, mix the dry ingredients in a bowl, mix the wet ones in a different one, mix all of the ingredients and fold the vegetable oil into the batter. Pour the batter into a loaf pan and bake until a skewer inserted in the center of the loaf comes out clean. While the cake bakes, make the lemon syrup. Pour the lemon syrup over the cake while the cake is still warm and let it cool completely. Meanwhile, prepare the lemon glaze. Serve the cake drizzled with lemon glaze, slice, and enjoy!
To make the Lemon Yogurt Cake, you will need the following ingredients:
Preheat the oven to 350 °F and grease an 8 ½- by 4 ¼-by 2 ½-inch loaf pan. Line the bottom of the pan with parchment paper and grease it too. Flour the pan.
Into a bowl, sift together 1 ½ cups all-purpose flour, 2 teaspoons baking powder, and ½ a teaspoon kosher salt.
In another bowl, whisk together 1 cup plain whole-milk yogurt, 1 cup sugar, 3 extra-large eggs, 2 teaspoons grated lemon zest, and ½ a teaspoon pure vanilla extract.
Slowly whisk the dry ingredients into the wet ingredients until well combined.
Fold ½ a cup vegetable oil into the batter with a rubber spatula. Make sure the oil is well incorporated.
Pour the batter into the prepared pan and level the top.
Bake for about 50 minutes, or until a cake tester or a skewer inserted in the center of the loaf comes out clean.
Meanwhile, combine ⅓ a cup lemon juice and the remaining ⅓ a cup sugar in a small pan. Cook over medium heat until the sugar dissolves and the mixture is clear. Set aside.
Cool the cake in the pan for 10 minutes, then gently place it on a baking rack over a sheet pan. While the cake is still warm, pour the lemon syrup over the cake and allow it to soak in. Let cool completely.
In a small bowl, combine 1 cup confectioners' sugar and 2 tablespoons freshly squeezed lemon juice.
Pour the lemon glaze over the cake and serve.
