This Meal-Prep Turkey Meatballs with Zoodles is one of my favorite healthy lunches to prepare in advance. I love to substitute spaghetti or traditional noodles with zucchini noodles or Zoodles, as I like to call them!
To make this delicious lunch recipe, start by making and cooking the meatballs. While the meatballs cook, make the zucchini noodles. Bring a large pot of salted water to a boil. Add the zucchini noodles to the pot and cook for 1 minute before draining completely. Assemble the dish by dividing the zucchini noodles among four lunchboxes. Top with the cooked turkey meatballs and marinara sauce. Sprinkle with Parmesan cheese and enjoy!
To make the Meal-Prep Turkey Meatballs with Zoodles, you will need the following ingredients:
Preheat the oven to 375 °F. Line a baking sheet with foil and spray it generously with nonstick spray.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 minced onion and sauté for about 5 minutes until it starts to soften. Add 2 minced garlic cloves and sauté for 1 minute more until fragrant.
Transfer the onion and garlic mixture to a medium bowl and leave to cool slightly. Add ¼ cup of parsley, 3 tablespoons of grated Parmesan, and 1 pound of ground turkey meat. Season the mixture with salt and pepper to taste. Shape the mixture into balls (about 2 tablespoons each) and place them on the prepared baking sheet.
Place the baking sheet in the oven and bake the meatballs for 17-20 minutes.
Toss 3 pounds of spiralized zucchini with ½ teaspoon of salt in a large colander. Let sit for 5 minutes.
Bring a large pot of salted water to a boil. Add the zucchini noodles to the pot. Cook for 1 minute, and then drain completely.
Divide the zucchini noodles among four lunchboxes. Top with the cooked turkey meatballs and ½ cup marinara sauce.
Sprinkle with Parmesan cheese.
Store in the refrigerator and serve for lunch during the week.
