Heat 1 tablespoon olive oil in a Dutch oven or large pot over medium heat. Add ½ cup diced onion and cook for 2-3 minutes, stirring occasionally until the onions are soft and almost translucent.

Add aromatics and rice

Add 2 cloves minced garlic, ¼ teaspoon ground cumin, ½ teaspoon turmeric, 1 ¼ teaspoons salt, black pepper to taste, and 1 ½ cups long-grain white rice to the pot. Toast, stirring frequently, for about 2 minutes until the rice starts to look translucent.

Add 2 ¼ cups water, stir to mix well, and bring to a simmer.

Reduce the heat to low, cover the pot, and let the rice simmer until all the water is absorbed and the rice is tender, about 15 minutes.
