These Morning Glory Muffins really are delicious and healthy too. In the recipe, I suggest using a mix of whole wheat flour with buckwheat or spelt flour. You can use all whole wheat if you don’t have spelt or buckwheat flour. A combination of carrots, apple, coconut, nuts, and sunflower seeds help to keep these muffins moist but add a pleasant crunch too.
To make these muffins, start by combining dry ingredients together before mixing in carrots, apple, coconut, nuts, and sunflower seeds. In a separate bowl, combine wet ingredients and pour them into the bowl with the dry ingredients. Mix them together and divide the batter between 12 muffin cups. Sprinkle the top with granola and bake in the oven. Enjoy!
To make Morning Glory Muffins you will need the following ingredients:
Preheat the oven to 375 °F. Line a 12-cup muffin tray with paper cupcake liners or lightly grease each cup.
Mix ½ a cup of dried cranberries with 1½ cups of whole wheat flour, ½ a cup of spelt or buckwheat flour, 1 cup of brown sugar, 2 teaspoons each of baking soda and ground cinnamon, ½ a teaspoon each of ground ginger and salt together in a large bowl.
Add in 2 cups of peeled and grated carrots, 1 large tart apple, ½ a cup of shredded unsweetened coconut, ½ a cup of chopped pecans, ⅓ cup of sunflower seeds, ½ teaspoon of orange zest and mix well using your hands or a fork until all the shredded apples and carrots are coated.
Whisk 3 large eggs, ⅔ cup of coconut oil, 2 teaspoons of vanilla extract, ¼ cup of orange juice together until frothy and completely combined.
Pour the egg mixture into the bowl with the dry ingredients and mix until completely moist.
Divide the cupcake batter between each of the muffin cups. Top each muffin with a sprinkle of granola.
Bake for 20-25 minutes, or until the tops have risen and a toothpick inserted in the center comes out clean.
Cool in the muffin tray for a few minutes before transferring to a wire rack to cool completely.
Enjoy immediately or store in an airtight container for up to three days.
