To make Walnut Coconut Applesauce Coffee Cake, you will need the following ingredients:
Preheat the oven to 350 °F. (175 °C)
In a bowl, combine the applesauce, brown sugar, white sugar, eggs and vanilla extract.
In a separate bowl, whisk the flour, baking soda, salt, and cinnamon together.
Add the flour mixture to the egg mixture, alternating with the buttermilk, just until the batter is moistened.
Fold the coconut and walnuts into the batter.
Transfer the batter into the prepared baking dish and bake in the oven for 45-55 minutes, until a toothpick inserted near the center comes out clean.
Remove the baked cake from the oven to a wired rack and allow to cool. Dust coffee cake with confectioners sugar.
