To make Orange Ginger Honey Cakes, you will need the following ingredients:
Preheat oven to 325 °F and lightly grease four x 6-inch mini loaf pans with non-stick spray or a thin coating of butter and flour.
In a medium bowl, sift the flour, baking powder, baking soda, ginger and orange zest.
In a small skillet on medium heat, brown butter. Stir over heat until foamy and brownish in color. Pour into the bowl of an electric stand mixer.
Add honey, orange juice, milk, sugar and lightly beaten eggs, to the browned butter. Mix on medium speed until smooth.
Slowly add the dry ingredient mixture and mix on a medium speed until batter is formed. Scrape excess from the sides of the bowl and incorporate into the batter, as needed.
Divide batter, evenly, amongst the 4 mini loaf pans and bake in the preheated oven for 25-35 minutes, covering with a piece of aluminum foil halfway through, until a wooden toothpick inserted into the center comes out clean.
Allow to cool before serving.
