Granted, fruit isn’t always the first ingredient which comes to mind when you think of the Italian appetizer, but Peach Bruschetta will change your mind! There is something about the combination of sweet juicy peaches and the cheese piled onto crisp, charred baguette which will have you crying out for more!
To make this recipe, start by toasting baguette until golden brown. Combine peaches, basil, salt, and oil in a bowl. Make a dressing by whisking together honey, vinegar, and hot sauce in a separate bowl. To assemble the dish, take a piece of baguette and top it with the cheese. Spoon some of the peach mixture on top and drizzle with hot honey dressing.
To make Peach Bruschetta, you will need the following ingredients:
Turn on the oven and preheat to 350 ˚F. Line a baking sheet with parchment paper.
Place baguette slices in a single layer on a baking sheet lined with parchment paper. Brush the baguette on both sides with 3 tablespoons of the olive oil. Bake in the oven for 15 to 18 minutes until golden brown.
Place 1 pound of diced peaches in a medium bowl with 2 chopped tablespoons of basil, ¼ teaspoon of salt and the remaining 1 tablespoon olive oil. Toss well.
Whisk ¼ cup honey with 1 teaspoon apple cider vinegar, 1 teaspoon hot sauce in a small bowl. Taste and add more hot sauce if you wish.
To serve, top each baguette piece with 1 cheese slice and spoon some peaches on top. Drizzle with the hot honey dressing and enjoy.
