This mouthwatering peach tart is beyond simple to throw together. All you need is a few pantry staples and fresh peaches. Start out by making the pie crust. I love to use my food processor to make the crust. It helps to make the crust at a moment’s notice. You can also make the crust ahead of time to cut down on prep time, as it needs to be chilled for at least one hour before baking. However, if you do not have the time, you can substitute your favorite store-bought crust. Prebake the tart shell and then arrange peach wedges over the bottom. Sprinkle the thyme sugar over, cover and bake until the peaches are baked through. Let cool and enjoy!
To make the Peach Tart with Thyme Sugar, you will need the following ingredients:
In a food processor fitted with a blade attachment, mix together 1 cup all-purpose flour, 6 teaspoons sugar, and ¼ teaspoon kosher salt. Add 1 stick diced butter and pulse a few times until it forms pea-sized clumps. With the motor running, add in 3 tablespoons water at once and mix to combine. Don’t overmix.
Using your hands, remove the dough onto a lightly floured surface and quickly form a ball.
Flatten the dough into a disk, wrap in plastic wrap and chill for at least one hour.
Preheat the oven to 400 °F and grease a 14-inch rectangular baking pan.
Roll the dough out to fit the prepared baking pan. Press it into the pan. Trim the edges if needed and prick the dough with a fork.
Prebake the tart shell for 10 to 14 minutes.
Meanwhile, rub 2-3 teaspoons thyme leaves into ⅓ cup sugar to release its oils and set aside.
Once prebaked, arrange the peach wedges over the bottom of the tart shell and sprinkle with thyme sugar.
Cover the crust rims with foil and bake for 25 to 30 minutes or until the peaches are baked through.
