This easy and delicious Pear Crisp in a cast-iron skillet is packed with fresh, mouthwatering pears and features a flavorful cinnamon streusel topping! Sweet and perfectly crisp, this crowd-pleasing dessert is fast to put together and is perfect when paired with a scoop of ice cream on top.
Crisp is one of the easiest desserts to make. Everything can be mixed and headed to the oven in less than 10 minutes. But first things first: the pears. What pears are best for pear crisp? Personally, I think Bartlett pears are best for this recipe because they are sweet and extremely aromatic. Peel, core, and slice the pears to about ⅛- to ¼-inch thick. Next, generously grease the cast-iron skillet. Combine the cornstarch with lemon juice and then whisk in the sugar and cinnamon. Toss the sliced pears with the prepared cornstarch mixture and pour the fruit filling into the skillet. Next, make the cinnamon streusel topping. This topping consists of oats, brown sugar, flour, cinnamon, nutmeg, and butter. Sprinkle the topping over the fruit and bake until the topping is crisp and the fruit is bubbling up.
To make the Pear Crisp, you will need the following ingredients:
Preheat the oven to 350 °F and grease a 9-inch cast iron skillet or baking dish with butter.
In a large bowl, combine 1 tablespoon cornstarch with 1 tablespoon lemon juice.
Whisk in ¼ cup white sugar and ¾ teaspoon cinnamon until smooth.
Add the sliced pears and gently toss until the pears are well coated.
Pour the pear filling into the prepared cast-iron skillet.
In a large bowl, stir together ½ cup brown sugar, ½ cup all-purpose flour, ¼ teaspoon nutmeg, ¾ teaspoon cinnamon, and ¾ cup rolled oats.
Using a pastry cutter or a knife, cut in 4 tablespoons butter until crumbly.
Sprinkle the cinnamon streusel topping over the fruit filling.
Bake for 35-40 minutes or until the topping is golden brown and crisp and the pear filling is bubbly.
Serve warm with a generous scoop of ice cream on top.
