I personally think that this Plum Tart is absolutely scrumptious. I won’t promise that it’s quick and simple because quick it is not! This recipe does need a lot of love and time, but it will be so worth it!
A thick crust, pate brisee, filled with a jelly-like center made from plums and whole toasted almonds around the edges. I love baking, and this is one of my favorite sweet tarts to serve!
To make Plum Tart, you will need the following ingredients:
In a food processor, gently pulse the flour, salt, and sugar together.
Add butter and pulse again until mixture resembles coarse meal with a few larger pieces too.
Drizzle 2 tablespoons of water over the mixture and blend once more until the dough begins to hold. If it is still too dry, you may add 2 more tablespoons water, adding them 1 tablespoon at a time.
Roll dough into a ball and wrap, loosely, in plastic wrap. Press into a disk using a rolling pin and place in the refrigerator for 1 hour to overnight until dough is firm. (You can also freeze it for up to 3 months, if you wish and thaw before using.)
Roll out the dough onto a lightly flavored piece of parchment paper. Shape dough into an 8-inch oval about ¼-inch thick. Place on a baking sheet.
In a clean food processor, gently pulse the almonds, 3 tablespoons sugar and flour together until a coarse meal. Sprinkle over the prepared dough.
Place plum slices onto the dough, close together and sometimes overlapping, leave a 2-inch border.
Lightly press down to fill out the pie and fold the edges over the fruit.
Refrigerate for 30 minutes to chill.
Preheat oven to 350 °F.
Brush the dough with cream and sprinkle the entire tart, evenly, with remaining 1 tablespoon of sugar.
Bake in preheated oven for about 40 minutes until the crust is dark golden and the center is bubbling with juicy plums.
Allow to cool completely on a wire rack before serving!
