I remember the first time I made Quiche Lorraine. It was a complete disaster! I poured the quiche filling into the pastry crust and I didn’t realise there were little holes in the pastry. The filling seeped out through the holes before it had time to cook. It gathered in a puddle at the bottom of my oven. What an idiot! I’ve since perfected the art of making this Quiche Lorraine recipe and today, I share it with you!
To make this recipe for Quiche Lorraine, you will need to make a pastry crust. Once the crust has chilled in the refrigerator, start making the filling. First, fry the bacon until crispy and scatter it on the pie crust along with Gruyère cheese and shallot. Whisk eggs, cream, cayenne, nutmeg and salt together and pour this egg mixture over the bacon and cheese. Sprinkle the top with the remaining cheese and bake in the oven. Once the quiche sets, slice and serve!
To make Quiche Lorraine, you will need the following ingredients:
Mix together 1 ¼ cups of flour and ½ teaspoon of salt in a large mixing bowl. Work ½ a cup of butter cubes into the flour until the mixture resembles large breadcrumbs.
Add one tablespoon of ice water until the mixture comes together as a dough. Form into a disc shape. Wrap the dough disc in plastic wrap and place in the refrigerator for 30 minutes until firm.
Preheat the oven to 375 °F.
Once the dough is chilled, roll it out on a floured surface to ¼ inch thick.
Drape the rolled out crust over a 9 inch pie dish. Crimp the edges of the crust and place it in the refrigerator until ready to use.
Cook 8 slices of bacon in a large skillet until it is crispy. This should take about 8 minutes. Transfer the bacon to a plate lined with paper towels to drain the grease.
Chop bacon and sprinkle it onto the chilled crust along with 1 cup of Gruyère cheese and 1 minced shallot.
In a medium sized bowl, whisk 6 large eggs, 1½ cups of cream and a pinch each of cayenne and nutmeg. Season to taste with salt.
Pour the egg mixture over the bacon and cheese in the crust.
Top the quiche with the remaining ½ cup of cheese.
Bake in the oven for 40 minutes until the edges of the crust are golden and the egg filling is cooked through.
Leave to cool for about 15 minutes before slicing into 6 slices.

Very filling and affordable meal though not simple I'd say it's something everyone should try to make atleast once.
