These Rainbow Waffle Sandwiches are a great treat for kids. I love to make them for my children’s birthday parties. Let’s face it – these treats will even put a smile on the big kid’s faces too!
Start by making the waffles and cooking them in a waffle iron. Once the waffles are cooked and cooled, scoop vanilla ice cream onto one half and spread it out. Sandwich together with another waffle half and coat the edges in sprinkles. Repeat until you have used up all the waffles. Freeze for a minimum of 4 hours until hard and cut each sandwich into triangles before serving. You can keep these for up to 2 days in the freezer.
To make Rainbow Waffle Sandwiches, you will need the following ingredients:
Mix 2 cups of all-purpose flour together in a bowl with 1 tablespoon of sugar, 1 tablespoon of baking powder, ½ a teaspoon of baking soda, and ½ a teaspoon of kosher salt in a large mixing bowl.
Whisk 1½ cups of buttermilk, 2 large eggs and 4 tablespoons of melted unsalted butter, together in a separate bowl.
Pour the buttermilk mixture into the bowl with the flour mixture and beat well until fully combined.
Preheat a round waffle iron.
Pour the batter onto the hot waffle iron and cook the waffles until they are golden and crisp on the outside. Repeat until you have used all of the batter.
Transfer the cooked waffles to a wire rack to cool.
Spoon ice cream onto half of the waffles, spreading evenly. Place the remaining waffles on top and gently push the ice cream out to the edges. Roll the edges of each sandwich in sprinkles.
Place in the freezer for a minimum of 4 hours or up to 2 days.
Cut each waffle sandwich into 4 triangles before serving.
