These Raspberry Crumb Bars are a sweet summer treat which I love to make with my kids when they are on school holidays. My kids love to get stuck in and help me bake and I love finding recipes to include them. These raspberry crumb bars are not only tasty, they are great for getting kids involved in the kitchen.
To make these raspberry bars, start by mixing together flour, butter and sugar. Mix ⅓ of the combined flour, butter and sugar with almonds and oats. Squeeze this together to make clumps and bake the remaining mixture in the base of a pan until golden brown. Mash raspberries and sugar together and spread it over the prebaked crust. Scatter remaining raspberries and chilled crumb mixture on top and bake until golden. Once cool, slice into bars and serve.
To make the Raspberry Crumb Bars, you will need the following ingredients:
Preheat the oven to 375 °F. Use parchment paper to line an 8-inch square baking pan. Leave 1-inch paper overhang on two of the sides for easy removal from the pan.
Place together 1 cup of flour in a food processor with 12 tablespoons of cold unsalted butter and ½ a cup of sugar and pulse 10-12 times until you have a breadcrumb texture.
Transfer ⅓ cup of the flour mixture to a bowl. Fold in ¼ cup of chopped toasted almonds and ½ a cup of oats. Use your hands to bring the mixture together to form small clumps. Place in the refrigerator to chill.
Add ½ a teaspoon of baking soda, ½ a teaspoon of kosher salt and the remaining 1 cup of oats to the mixture in the food processor. Pulse 12 to 15 times until fully incorporated.
Press into the base of the parchment lined pan. Bake in the oven for 14-16 minutes until golden brown.
Mash 1 container of raspberries and the remaining tablespoon of sugar together in a bowl and spread the mixture out over the prebaked crust.
Scatter the remaining container of raspberries and the chilled crumb topping over raspberry filling.
Bake for 40 to 45 minutes until golden brown on top.
Cool in the pan for 30 minutes, before lifting the cake out of the pan using the overhang. Transfer to a wire rack to cool completely.
Slice into 16 bars and transfer to a wire rack.
Serve with your favorite tea or coffee.
