Layered in small glasses as individual parfaits, these red, white and blue berry trifles make for a delicious and patriotic summer dessert. The recipe is quick and simple to throw together. To start, wash and pat dry the strawberries and blueberries. Hull and dice the strawberries. Crush the wafers in a ziplock bag. To assemble the trifles, add vanilla wafer crumble to a glass, pipe or spoon a layer of cheesecake, add diced strawberries, pipe more cheesecake, and finish with blueberries and a final rosette of cheesecake. Garnish with blueberries and strawberry slices. The recipe yields 14 servings.
