Shuba (Fur Coat Salad) is a layered salad whose primary ingredient is herring. In Russian, shuba is a fur or fur-lined overcoat or cloak. So this dish is known as herring under a fur coat! It consists of layers of diced pickled herring, grated boiled vegetables, chopped onions and mayonnaise. It is most commonly eaten at Christmas or New Year but I like to make it in summer too!
Start by boiling the vegetables and grating them. Chop herring and onion. The most important part of this recipe is the layering. I advise that you follow my order for two reasons: placing the heaviest layer (potatoes) at the bottom helps keep the salad sturdy. Next add layers of onions, herring, carrots, mayonnaise, beets and finish the salad with another thin layer of mayonnaise on top.
To make Shuba (Fur Coat Salad), you will need the following ingredients:
Boil 3 beets in a small pot for about 45 minutes.
In a separate pot, boil potatoes and carrots for 25 minutes.
At the end of the cooking time, remove all ingredients from the boiling water and let them cool.
Once cooled, peel and grate the potatoes, carrots and beets separately using a box grater.
Finely chop 1 pound of herring and 1 small onion.
Take a 9 inch circular (or square) mold and place it on a large plate. Start by placing potatoes on the bottom.
Place a layer of onion and herring on top of the potatoes.
Next, add a layer each of carrot, mayonnaise followed by beets and lastly a thin layer of mayonnaise on top.
Place the salad in the refrigerator to chill for at least 6 hours.
Carefully remove the mold immediately before serving.
