I adore gnocchi and this Smoked Salmon and Vodka Gnocchi is one of my favorite weekday dinners. It reminds me of the delicious meals I ate in Italy. You can omit the vodka if you don’t like cooking with alcohol.
To make this, start by frying onion in a skillet until softened. Add cherry tomatoes and cook until they have broken down. Increase the heat and add the vodka. Cook while stirring until the vodka evaporates. Place a large pan of water over heat and bring to a boil. Add the gnocchi and cook until the pieces start to float. Drain and transfer to the frying pan with the sauce. Stir in the cream, smoked salmon, chives and plenty of seasoning.
To make my Smoked Salmon and Vodka Gnocchi, you will need the following ingredients:
Heat 1 tablespoon of oil in a large frying pan. Add 1 finely sliced onion and sauté gently for about 10 minutes until softened.
Add 9 ounces of cherry tomatoes to the pan and cook for 10 minutes until they have broken down.
Increase the heat under the pan and add 3 tablespoons of vodka. Cook until the vodka evaporates.
Bring a large pan of water to a boil. Add the gnocchi and cook for about 5 minutes until the pieces start to float.
Drain the gnocchi and transfer to the pan with the sauce.
Stir in 4 fluid ounces of cream, 4 ounces of smoked salmon and 3 tablespoons of chopped chives. Season with plenty of salt and freshly ground black pepper.
Serve immediately.
