I love to make this Spinach & Cheese Breakfast Skillet when I know I’ll have a busy day ahead and need something to stave off the hunger pangs. Like the old phrase, I tend to eat breakfast like a king – it is often my biggest meal of the day so I like to make an effort with it!
This recipe is healthy and filling, combining ingredients like potato, bacon, and spinach to make a hash in a skillet. In the center of the hash, I crack in two eggs and sprinkle with cheese. I cook the hash until the egg whites are completely set. Then I enjoy with a large mug of coffee while I read the weekend newspaper. Bliss!
To make Spinach & Cheese Breakfast Skillet, you will need the following ingredients:
Use a fork to prick the small potato in several spots. Cook in the microwave on high for 4 minutes. Leave to cool for 5 minutes before chopping into ½-inch cubes.
Place bacon in an 8-inch cast-iron skillet and cook over medium high heat until crisp. Remove the crisp bacon from the skillet, but leave the bacon drippings in the skillet.
Add 1 tablespoon of oil and the diced potatoes and cook for about 5 minutes while stirring frequently, until the potatoes are browned.
Add 3 cups of baby spinach and stir to combine. Leave for about 1 minute until the leaves are just wilted. Season to taste with salt.
Make two hollows in the center of the potato mixture. Crack an egg into each of the hollows. Reduce the heat and cook for 2-3 minutes until partially set.
Scatter cheese over the top. Cover and cook for 1-2 minutes until the cheese melts and the egg whites are set.
Serve garnished with crispy bacon and freshly ground pepper.
