Easy Steak and Egg Hash

My Steak and Egg Hash recipe is the ultimate one pan meal, easy to make and delicious to eat! I use a good quality sirloin for this recipe, the taste of the meat really stands out so it’s worth investing a bit more to get something really juicy and succulent.

The great thing about this recipe, and other one-pan methods, is that all the flavors remain in the pan and get soaked up by the other ingredients: the beef absorbs the onion flavor, the potato soaks up the beef juices, the tomatoes are flavored with Italian seasoning. Everything works together as one delicious dish and then to top it off it all gets coated in yummy creamy egg yolk when you cut into it. Enjoy this one – it’s a cracker!

Season the steak with salt and pepper. Add the steak and fry until cooked through, turning over half way through cooking. Transfer to a plate, leaving the fat and juices in the pan.

Add the potatoes to the pan. Season with salt and pepper and fry for 8-12 minutes, stirring every now and again, until softened.

4

Add the onion

Add the onion to the pan and fry with the potatoes for 3-5 minutes until lightly browned.

5

Slice the steak and return to the pan

2

Slice the steak into strips and return to the pan. Lower the heat.

6

Crack the eggs into the pan

1

Use a spoon to make 4 dips in the steak and potato mixture. Carefully crack an egg into each dip.

7

Add the tomatoes

6

Add the tomatoes to the pan, scattering evenly over the top. Cook for 2-6 minutes until the egg whites have set but the yolks are still runny.
