I cannot get enough of this Strawberry & Almond Torte at the moment. This torte is dense and delicious. Thanks to the addition of ground almond, this torte has a richer flavor than a sponge cake. It tastes super with afternoon coffee and it is really quick and easy to make.

Start by mixing all of the ingredients except the strawberries and confectioners’ sugar and cream together in a food processor to make the cake batter. Spoon half of the mixture into a baking pan and spread it out evenly. Place the sliced strawberries on top and spread the remaining cake mixture over the strawberries. Bake in the oven and serve warm, dusted with confectioners’ sugar and a dollop of cream and yogurt on top. Enjoy!

Steps to make Strawberry & Almond Torte

Heat the oven and prepare a pan

Preheat the oven to 355 °F. Lightly grease a 9-inch loose-bottomed baking pan and line the bottom with parchment paper.

Mix cake batter

Mix 175 grams of ground almond with 175 grams of softened butter, 175 grams of golden caster sugar, 175 grams of self-raising flour, 1 teaspoon of ground cinnamon, 1 large egg, and 1 egg yolk together in a food processor until the ingredients are just combined.

Spoon half the batter into the pan

Spread half of the cake batter over the base of the pan in a smooth layer. Ensure there are no gaps.

Add strawberries

Lay strawberries on top of the cake mixture.

Top with remaining batter

Add the remaining cake batter to the baking pan. Spread the batter out as evenly as possible, but don’t worry if a few strawberries are visible.

Bake

Bake for about 1 hour. Check after 40 minutes and if the top looks dark, cover with baking foil for the remaining cooking time.

Cool slightly

Cool the torte slightly in the baking pan before loosening the edges and removing from the tin.

Serve

Dust the torte with confectioners’ sugar and serve warm or cold with cream and Greek yogurt.
