This easy Strawberry Crumble makes a perfect summertime treat. Jammy strawberries are topped with an aromatic buttery layer of brown sugar oat crumbs that are as crisp as cookies. Serve with a large serving spoon, dipping down to get both topping and strawberry filling with each spoonful. This is my favorite way to eat strawberries right now!
This delicious crumble bakes quickly, which is a bonus on hot days. To start, toss the strawberries with cornstarch, sugar, and orange juice. Pour the mixture into a baking dish. Now, make the topping. It comes together quickly with minimal effort, using just pantry staples. Combine oats, flour, brown sugar, cinnamon, vanilla extract, and a pinch of salt. Pour the melted butter over and stir with a fork until the mixture forms thick crumbs. Sprinkle the topping over the berries and bake until golden brown and bubbling. It’s best to serve the whole thing fresh from the oven with a scoop of ice cream.
To make the Strawberry Crumble, you will need the following ingredients:
Preheat the oven to 350 °F.
Place 1 pound of diced strawberries in a large bowl and sprinkle with ¼ cup cornstarch. Gently stir until evenly coated.
Add ¼ cup sugar and 1 tablespoon orange juice and gently stir to combine.
Pour the strawberries into an 11×7, 8×8, or 9-inch round baking dish.
In a large bowl, whisk together ⅔ cup old-fashioned oats, ⅔ cup all-purpose flour, ½ cup brown sugar, 1 teaspoon vanilla extract, ½ teaspoon ground cinnamon, and ¼ teaspoon salt.
Pour ½ cup melted butter over and use a fork to stir until the flour and oats are completely coated and form thick crumbs.
Sprinkle the topping evenly over the strawberry filling.
Bake for 30-35 minutes or until bubbling along the sides and the topping is golden brown.
Serve warm with a scoop of vanilla ice cream if you wish. Enjoy!
When ripe strawberries are as plentiful as they are now, I use them to make this Strawberry Crumble. It calls for 2 pounds of fresh strawberries, which are then tossed with cornstarch, orange juice and sugar. Top with a buttery brown sugar oat crumble and bake until bubbling.
