Strawberry, Pistachio, and Goat Cheese Pizza are words that I never really thought I’d be using in the same recipe, but here we are! I first tried this unusual flavor combination at one of my book club meetups. It was someone else’s turn to host and she served a few of these pizzas. I have to say I was unsure, until I tasted a slice & it tasted amazing! Really fresh and light.
The goat cheese pairs really well with the strawberries. The pistachio gives a nice nutty texture and a slightly salty taste. If I am making this for ourselves, I use a prebaked pizza crust that I buy at the store as it’s so easy. If I am making these pizzas for a crowd, I’ll make up a batch of pizza dough.
To make Strawberry, Pistachio, and Goat Cheese Pizza, you will need the following ingredients:
Preheat the oven to 425 °F.
Place the pizza crust on a baking tray and bake for 8 minutes in the preheated oven.
When the crust is out of the oven, place the goat cheese on top.
Mix the olive oil, lemon juice, salt, and black pepper together in a bowl.
Add the strawberries and baby spinach, gently toss to coat well.
Spoon the strawberry topping onto the goat cheese and spread out evenly.
Top the pizza with the pistachio nuts and cheese shavings.
Cut into slices and serve.
