The Perfect Newfoundland Snowballs

The Perfect Newfoundland Snowballs recipe is here! My favorite sweet treat when I was a kid was a snowball. If you’re not familiar, snowballs are soft chocolate treats which are covered in desiccated coconut. They are sweet and sticky and children love them!

To make these snowballs, start by boiling sugar, butter and milk in a large saucepan. In a large bowl, mix oats, coconut and cocoa powder. When the milk mixture reaches 230 °F, pour it into the oat mixture. It will be too sloppy to shape into balls, so transfer the mixture to chill and firm up. When you have the best consistency, shape the mixture into balls and roll them in coconut. Chill in the refrigerator until you are ready to eat these. Enjoy!

i made half of the recipe. refrigerated overnight and it was so hard in the am i had to microwave it and then it was too hot to make balls. i did it but the coconut would not stick to the ball. i found the mixture was not glossy. i boiled it for 6 mins, maybe that was too long for half of recipe.
