I love to make this Tomato Egg Salad when I am working from home. It’s a treat that I look forward to all morning until my lunch break when I can take a few minutes to switch off from work and to take a few moments of mindfulness as I prepare my meal.
To make this salad couldn’t be easier – I start by boiling the eggs in a large saucepan of boiling water. As the eggs cook, I chop up a tomato and finely slice a clove of garlic and a handful of basil leaves. I mix these together in a bowl. Once the eggs are cooked, peel the shells and chop them. Mix them with the other ingredients. Season with salt and pepper and drizzle some olive oil over the top. Yum!
To make my version of Tomato Egg Salad, you will need the following ingredients:
Carefully place 3 eggs in a large pan of boiling water using a spoon. Cook in the boiling water for about 6 minutes (for medium sized eggs).
Chop 1 tomato and place the pieces in a bowl.
Chop a clove of garlic finely and roughly chop a handful of basil. Add them to the tomatoes.
Rinse the eggs under cold running water for a few minutes until they are cool enough to handle.
Peel and dice the eggs and add them to the bowl with the other ingredients. Mix well.
Drizzle olive oil over the salad and season to taste with salt and pepper.
Serve on hot buttered toast, garnished with sunflower sprouts.
