¾ cup Mozzarella part-skim, shredded
¾ cup Provolone cheese shredded
¼ cup Basil fresh, minced
4 Plum tomato thinly sliced
Salt to taste
Black pepper to taste

a few leaves of fresh Basil additional

This Tomato Tart with Three Cheeses reminds me of when I was a teenager. I had a part-time, weekend job at the local bakery and one of the first deliveries to arrive in the morning would be decadent tomato tarts and this is how I came up with my own recipe for this early morning arrival!

I imagined what I could smell and come up with the following ingredients – puff pastry filled with mozzarella cheese, provolone cheese and Parmesan cheese, fresh basil, and thin slices of tomato. It’s so close to the real deal.

Steps to make Tomato Tart with Three Cheeses

Prepare pastry

Unfold 1 sheet of thawed puff pastry onto a lightly floured surface and shape into a 12-inch square then transfer to a baking sheet lined with baking paper. Finally, sporadically pierce with a fork a few times.

Combine cheese mix

In a small bowl, combine ¾ cup of shredded mozzarella cheese with ¾ cup of shredded provolone cheese and ¼ cup of minced basil. Once combined, sprinkle to cover the pastry, leaving about 1-inch border around the edges.

Add tomato and Parmesan

Add thin slices from 4 tomatoes around the tart, season with salt and pepper and finally top with ¼ cup of shredded Parmesan cheese.

Preheat the oven to 400 °F and bake for about 15-20 minutes until golden brown.

Cool on a wire rack for about 5 minutes then garnish with sprinkles of fresh basil! Slice and serve heated or at room temperature. Enjoy!
