These Traditional Welsh Cakes are the cutest, mini dough-like cakes that I love making for breakfast sometimes or a tea time snack. Softer than a crumpet, the dough is so easy to make and can be prepared in just a few minutes. Then using a cookie cutter, cut 3-inch round shapes that get cooked in butter on a hot griddle pan or bake stone.
Enjoy them just as with some caster sugar sprinkled over or use two cakes to make a jam sandwich! They’re yum!
To make Traditional Welsh Cakes, you will need the following ingredients:
Using your fingers, gently rub 110g of butter into 225g of sifted flour to make breadcrumbs.
Add 85g of caster sugar and a handful of sultanas along with the egg and mix to combine and form into a ball-shape. Use a bit of milk, if needed.
Roll the dough out onto a lightly floured surface, about ¼-inch thick and use a cookie cutter to cut about 3-inch round-shapes.
Generously grease a bake stone or heavy iron griddle with some butter and wipe any excess away. Working in batches, allow the griddle to heat up before placing Welsh cakes on. Cook for about 2-3 minutes per side and caramel brown in color.
Dust with powdered sugar and serve warm. Enjoy them as a jam sandwich too!
