This Vegan Barbecue Chickpea Salad is one of my favorite vegan recipes out there. Simmer your chickpeas in the barbecue sauce, over a low heat for just a few minutes and notice your balls of protein begin to absorb so much added flavor.
Serve them over a fresh, crunchy salad of lettuce, tomato, cucumber, corn and red onion – this salad is a vegan’s best kept secret!
To make Vegan Barbecue Chickpea Salad, you will need the following ingredients:
In a small saucepan over medium heat, simmer the chickpeas in the barbecue sauce for about 5-10 minutes until the sauce thickens and sticks to the chickpeas. Remove from heat and set aside.
Divide the lettuce, cherry tomatoes, cucumber, corn kernel and onions between 2 serving bowls. Arrange your bowls and salad ingredients as you wish.
Add chickpeas over the top of the salad.
Drizzle each salad with the ranch dressing and garnish with lime wedges, before serving.
