This Oyster Mushroom Soup is a delicious vegan soup that is simply bursting with flavor and healthy vegetables. It is really simple to prepare too. Make a pot in advance and enjoy it for lunch for the whole week.

To make this simple soup, start by cooking green onions, white onions, garlic, and carrots until tender. Stir in tomato paste and cook for 2 minutes. Add chopped oyster mushrooms, parsley, salt, and pepper and cook over medium-low heat for 10 minutes, stirring occasionally. Mix in dry pasta, lemon juice, and hot water. Bring the soup mixture to a boil. Once boiling, let it simmer for 15 minutes. Serve with chopped fresh parsley and green onions on the top.

Steps to make Vegan Oyster Mushroom Soup

Sauté onions, garlic, and carrots

Heat 1 tablespoon of olive oil in a large pot. Saute chopped green onions, white onions, 2 chopped cloves of garlic, and ½ a cup of chopped carrots until tender.

Stir in tomato paste

Stir in 1 tablespoon of tomato paste. Cook while stirring for 2 minutes.

Add mushrooms and parsley

Add chopped oyster mushrooms, 2 tablespoons of parsley and season with salt and pepper. Cook over medium low heat for 10 minutes, stirring occasionally.

Add pasta

Add ½ a cup of dry pasta, ½ a tablespoon of lemon juice, and 5 ½ cups of hot water.

Simmer

Bring the soup to a boil and leave to simmer for 15 minutes.
