I love to bake birthday cakes for my friends on their birthdays and this Victory Chocolate Cake is always the request. Low on sugar with the added treat of coffee makes it the perfect choice for all my mom friends!
Dating back to the Second World War, when there was a sugar shortage, this recipe was designed to make a sweet enough chocolate cake, regardless. My favorite chocolate syrup glaze to complement the taste of dark corn syrup and coffee.
To make Victory Chocolate Cake, you will need the following ingredients:
Preheat the oven to 350 °F (175 °C).
Lightly grease baking dish.
In a large bowl, sift together the flour, cocoa, baking soda and salt. Set aside.
In a clean bowl, beat the egg whites, until stiff and peaks form.
In a mixing bowl, using an electric mixer at medium speed, cream together the sugar and shortening until light and fluffy.
Blend in the corn syrup and the egg yolks.
Beat in the vanilla extract.
Alternating between the dry ingredient mix and the coffee, combine into the creamed mixture.
Gently fold in the eggs whites.
Pour the batter into the greased baking dish. Bake in the preheated oven for 45 mins or until cake is done. To test if it’s baked, insert a toothpick into the center of the cake. If cooked, it should come out clean.
Cool in the baking dish on a rack and frost as desired.
