The recipe is pretty easy yet full of flavor. Roast the vegetables with a good amount of olive oil and a few sprigs of rosemary and thyme. Meanwhile, whip up the feta. I find it easier to do this in a food processor. Just combine the feta, Greek yogurt, and honey and pulse until smooth and creamy. Once the veggies are done, spread the whipped feta out onto a serving plate and spoon the roasted veggies over top. Garnish with croûtons and chili flakes, and serve with more honey and olive oil for drizzling, if you wish.
To make this Whipped Feta Dip, you will need the following ingredients:
Preheat the oven to 425 ℉
In a baking dish, combine 14 ounces cherry tomatoes, 4 shallots cut into wedges, 2 sliced garlic cloves, sliced ½ a lemon, 3 ½ ounces mixed olives. Place 2 sprigs rosemary and 6 sprigs thyme over and drizzle with 2 tablespoons olive oil. Toss to coat.
Roast in the preheated oven for 20-25 minutes
On a baking sheet, toss together 4 ounces cubed bread with the remaining 1 tablespoon olive oil. Season with salt and black pepper and roast for about 10 minutes.
In a food processor, combine ½ a cup Greek yogurt, 7 ounces crumbled feta, and 1 tablespoon honey.
Pulse until smooth and creamy, scraping down the sides if needed, about 3 minutes.
To serve, spoon the vegetables over the whipped feta. Top with croûtons and garnish with a pinch of chili flakes. Enjoy
