A salad that is anything but boring with a combination of basmati and wild rice, tossed with chickpeas, dried cranberries, red onions and crushed garlic seasoned with a drizzle of olive oil and lemon juice and crumbles of feta cheese sprinkled over the top. It’s sweet and salt, crunchy and creamy and everything one would want from a salad.

Cook rice

Rinse the rice and cook according to the package instructions, adding the chickpeas during the final 4 mins.

Drain

Drain rice and chickpeas from the water and allow to cool a little.

Add cranberries and onion

Add the cranberries and onion and mix through.

Prepare salad dressing

In a medium mixing bowl, whisk the garlic, olive oil, lemon juice together until well combined. Toss with the rice and chickpeas to coat.

Portion the rice and chickpeas piles over 4 serving plates, evenly, and crumble the feta cheese over then garnish with sprinkles of parsley. Enjoy warm or cold.
