I love a good healthy treat and this Zucchini Chocolate Cake is all that. Serving up 24 servings, a cake doesn’t get bigger than that! A delicious and moist chocolate cake batter with grated zucchini and chopped walnuts folded through for that rich texture and nutty crunch.

I like to make a double chocolate frosting for my topping, but you can choose any flavor you like, a pistachio cream works wonders too!

Preheat oven and prepare baking pan

Preheat oven to 350 °F and grease and flour a 9x13-inch baking pan.

Combine dry ingredients

In a medium bowl, sift the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon and mix to combine.

Add eggs and oil

Stir in the eggs and oil and mix well forming a smooth batter.

Add nuts and zucchini.

Fold in the nuts and zucchini, evenly, through the batter.

Bake cake

Pour batter into prepared baking pan and bake in preheated oven for 50-60 minutes until a wooden toothpick inserted into the center comes out clean.

Allow to cool completely before frosting, slicing and serving.
