To make 15 Minute Tuna Pasta with Pangrattato, you will need the following ingredients:
In a large saucepan of boiling water, cook 1 package of spaghetti according to packet instructions. Reserve ½ cup of pasta cooking water then drain and set aside.
In a large bowl, combine 200 g of canned tuna, 50 g of capers, 50 g of green olives, the juice from 1 lemon, 50 g of grated Parmesan cheese and 15 g of freshly chopped parsley and mix well.
In a frying pan over medium-high heat, heat 2 tablespoons of olive oil and add 100 g of fresh breadcrumbs, 1 teaspoon of chili flakes and a large pinch of salt. Sauté for 5 minutes.
Add 2 cloves of minced garlic and cook for one more minute until fragrant.
Remove from the heat and add 10g of freshly chopped parsley. Stir to mix through.
Add tuna mixture to the cooked pasta along with the reserved ½ cup of cooking water and 1 tablespoon of olive oil. Toss everything to coat well in the sauce and fillings.
Serve your tuna spaghetti with homemade Pangrattato sprinkled over the top.
