Almond Shortbread Owls are super cute Fall treats. I love to make these owl cookies when my kids friends come for a playdate. I serve them up with glasses of milk and they always go down a treat. What is it about owls that everyone loves I wonder? They’re just the cutest!
These cookies are very easy to make. Start by making a shortbread cookie. The main thing when it comes to this recipe is the decoration. I use leftover shortbread to make dough eyes for the owls. I insert a chocolate chip into each one to make them look like eyes. I use a whole almond for the owl beaks, sunflower seeds for the toes and 3 sliced almonds for each wing.

Grind ¾ cups sliced almonds into a fine meal in a food processor.
Mix ground almonds, flour, zest, and salt in a large bowl and set to one side.
Beat the butter, sugar, and almond extract in a large bowl using an electric mixer.
Add the flour mixture and stir well until fully combined. Divide the dough in two and press each piece into a flat ½ inch thick disc and wrap tightly with plastic wrap. Place the disc in the refrigerator for an hour until firm.
Preheat the oven to 350 °F and line some cookie sheets with parchment paper.
Using a 2 ½ inch round cookie cutter, cut out circular cookies. Place the cookies 2 inches apart on cookie sheets. Using leftover bits of dough, make small round eyeballs of dough.
Gently press two balls onto the surface of each cookie. Place a whole almond between the eyes to make a beak. Place a chocolate chip on each eyeball to make a pupil. Using sunflower seeds, make some owl toes. Place 3 sliced almonds overlapped on the side of each cookie for wings.
Bake in the preheated oven for about 15 minutes until the edges are lightly golden.
Allow the cookies to cool on a baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Serve with coffee or a glass of milk.
