These Apple Pie Cups with Puff Pastry are such a simple dessert to prepare. I love to make these for winter dinner parties because they take just a fraction of the time it takes to prepare a whole apple tart, leaving more time to prepare the other courses!

To make these delicious puff pastry cups, start by cutting pastry squares and pressing them into a muffin pan. Bake for a few minutes and make apple filling. Once the pastry cases have cooled, fill with apple mixture. Finish by baking in the oven. Cool completely before serving.

Steps to make Apple Pie Cups with Puff Pastry

Heat oven and prepare muffin pan

Preheat the oven to 350 °F. Lightly spray a muffin pan with cooking spray.

Cut pastry

Cut each sheet of puff pastry into nine equal squares.

Line muffin pan with pastry squares

Place each piece of pastry into one of the muffin cups and press down. Transfer the muffin pan to the oven and bake the pastry cups for 10 minutes.

Leave to rest

Once the pastry cups start to brown, remove the pan from the oven and allow to rest for five minutes.

Simmer apples

Place 6 cubed apples and the juice of one lemon in a medium saucepan with ¼ cup of water. Heat until the mixture starts to simmer. Cook for eight minutes.

Make apple mixture

Combine ⅔ cup sugar with 2 tablespoons of cornstarch, 2 teaspoons of ground cinnamon, ½ a teaspoon of allspice, ¼ teaspoon of ginger, ¼ teaspoon of nutmeg, and ¼ teaspoon salt in a small bowl. Add the mixture to the apples and stir to combine. Simmer for a further two minutes before removing from heat. Leave to cool slightly.

Using a spoon, press down the center of each baked pastry cup.

Fill pastry cups

Fill each cup with the apple filling.

Return the muffin pan to the oven and bake for 5 - 10 minutes.

Leave the apple pie cups cool in the pan for 10-15 minutes in the pan before transferring to a wire rack to cool.
