These Apple Pie (in the apple) treats are so much fun to bake and eat! They look so pretty with their pastry lids and there’s no messing about with individual baking dishes – the pie is cooked IN the apple!
Start by making a simple pastry dough in the food processor. While the pastry is resting, hollow out some apples and save the pulp.
To make Apple Pie (in the apple), you will need the following ingredients:
Place the flours, corn starch, sugar, butter, egg, salt and baking powder in a food processor. Mix until it forms a ball. If necessary, add a few drops of cold water. Don't over mix.
Place the pastry in the refrigerator to chill for 30 minutes.
While the pastry chills, wash the apples and slice the top off each one.
Using a sharp knife and a spoon, remove the centre of the apples to form bowls. Peel and chop the tops as well as the removed pulp and set it to one side in a small bowl.
To stop the apples from getting dark, mix the pulp with lemon juice.
Preheat the oven to 370 °F and line a baking sheet with parchment paper.
When the dough has chilled, roll it into a rectangle. Cut out 6 lids - I use a flower-shaped cutter for this. Be sure to make some holes to release vapor during baking.
Mix the sugar, ½ tablespoon of flour, and cinnamon together and sprinkle over the apple pulp. Toss with a spoon and fill the apple bowls with the mixture.
Place a lid carefully on each apple but don't press it down too hard.
Bake in the oven until the lids are light golden brown, about 40 minutes.
Serve warm, sprinkled with powdered sugar, if you wish.
