I’ve found the perfect Halloween Apple Pumpkin Muffins recipe for exactly the time when these 2 ingredients are ripe in season!
I love hosting theme inspired dinner parties and these muffins match the spooky and spicy theme perfectly, with a hint of cinnamon, ginger and nutmeg to enhance the flavor from the apple and pumpkin. Pair it with a chai latte for the perfect match!
To make Apple Pumpkin Muffins, you will need the following ingredients:
Preheat oven to 350 °F.
In a large mixing bowl, combine the flour, sugar, baking soda, cinnamon, ground ginger, salt and ground nutmeg together.
In a separate mixing bowl, gently whisk the eggs, canned pumpkin and vegetable oil together.
Mix the dry ingredients into the bowl of wet ingredients until just moistened and coming together. Do not overmix.
Gently fold the apples into the muffin mixture.
Using a spoon, portion muffin mixture into greased, or paper-lined, muffin cups until ⅔ full. Cleaning the edges as necessary.
Bake in preheated oven for 30-35 minutes until a wooden toothpick inserted into the center comes out clean.
Allow to cool for 10 minutes before removing from the pan.
Serving warm or at room temperature.
