This Apple Ugly Cake may not be the prettiest cake in the world, but it sure is tasty! It’s packed full of apples, raisins, and warming cinnamon. It always turns out deliciously crunchy and fruity, thanks to the apple.

Whenever I bake this apple cake, my kitchen smells amazing for hours afterwards. I think the spiciness of the cinnamon makes it a perfect cake for those days when summer is just starting to turn to fall and there is a slight chill in the air.

If you find the cake looks too plain, you could sprinkle some flaked almonds on top before cooking. Or you could shake some confectioners sugar over the top just before serving. I’ve made this for lots of different occasions and it always receives compliments – try it the next time you need to wow a crowd!

Heat the oven and prepare a pan

Preheat the oven to 325 °F. Line a 9x13 inch baking pan with parchment paper, lightly grease it.

Combine dry ingredients together

Mix the sugar, flour, baking soda, salt, and cinnamon in a bowl.

Mix the oil, eggs and vanilla

In a separate bowl, mix oil, eggs and vanilla together.

Combine the wet and dry ingredients

In the centre of the flour mixture, make a well. Pour in the oil, eggs and vanilla and stir well until the ingredients are fully combined.

Add the apples and raisins

Fold the apples and raisins into the mix.

Put the cake mixture in the pan

Put the cake mixture in the prepared baking pan and spread it out evenly.

Bake for 50 minutes. Remove from the oven when the cake feels firm and is a light brown color on top.

Leave to cool

Leave the apple ugly cake to cool on a wire rack.

Serve the cake with a spoonful of cream on top.
