1 cup Butter softened
½ cup Brown sugar light
½ cup Sugar
2 Large eggs
½ tsp Orange extract
½ tsp Vanilla extract
1½ cups All-purpose flour
ÂĽ tsp Salt
1 tsp Baking powder
1 tsp Pumpkin pie spice
2½ cups Rolled oats
½ cup Walnuts chopped
1 cup Cranberries dried

This is the time of year that I dig out all my fall recipes and one of my favorites is these Autumn Harvest Cookies which are full of seasonal ingredients and flavors like cranberries and pumpkin pie spice. 

To make a batch of these healthy cookies, start by mixing wet ingredients together. Combine dry ingredients. Combine the wet and dry ingredients and transfer balls of cookie dough to the baking sheet. Bake in the oven until golden around the edges. Once cooked, remove from the oven and transfer to a wire rack to cool.

Steps to make Autumn Harvest Cookies

Heat oven and line baking sheet

Preheat the oven to. Line a baking sheet with parchment paper.

Cream butter and sugar

Cream together 1 cup softened butter and ½ a cup each of brown sugar and white sugar.

Add eggs, vanilla and orange extract

Add 2 large eggs and ½ a teaspoon each of orange and vanilla extract and beat into the creamed mixture until smooth.

Combine dry ingredients

In a separate bowl, mix 1½ cups of all-purpose flour, ¼ teaspoon of salt, 1 teaspoon of baking powder and 1 teaspoon of pumpkin pie spice together.

Combine wet and dry ingredients

Mix the dry ingredients with the wet ingredients and add 2½ cups of rolled oats, ½ a cup of chopped walnuts and 1 cup of dried cranberries.

Place cookies on a baking sheet

Using a small ice cream scoop, drop rounded balls of dough onto the prepared baking sheet.

Bake

Bake in the oven for 8-10 minutes until the cookies are golden around the edges.

Cool

Remove the cookies from the oven and allow to cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.

Serve

Serve when you need a sweet pick-me-up.
