To make these muffins, start by mixing dry ingredients in one bowl and the wet ingredients in another. Combine the wet ingredients with the dry ingredients and stir them together until just incorporated. Spoon the batter into each muffin cup until they are nearly full which will help to create a puffy dome on your muffins. Bake the muffins for 20-22 minutes or until a toothpick inserted into the center comes out clean.

Preheat the oven to 375 °F. Line a 12-cup muffin pan with paper muffin liners.
In a large mixing bowl, combine 1¾ cups of all purpose flour, 1 cup of sugar, ½ a cup of dark brown sugar, 1 teaspoon of baking soda, ½ a teaspoon of salt, 2 teaspoons of cinnamon, ¼ teaspoon of ground cloves, and ¼ teaspoon of nutmeg.
In a separate bowl, whisk together 2 eggs, a can of pumpkin puree, ½ a cup of melted coconut oil, and 1 teaspoon of vanilla extract.
Pour the wet mixture into the bowl with the dry ingredients and stir together until just incorporated.
Spoon the batter into the muffin pan. Divide the batter evenly between the 12 liners until each one is almost full.
