Recipe Description

I love homemade pizza night and considering zucchini is one of my favorite veggies, this Zucchini Pizza makes me and my whole family extremely happy. I use prepared pizza dough that I store in the freezer or you can also buy premade, packaged pizza dough.

Easy, peezy pizza with zucchini, garlic, mozzarella cheese, crumbled goat cheese, chive slices and cherry tomatoes as toppings. You’ll notice, I don’t use a tomato sause base for this pizza because it’s nice to change things up every little while.

    Season and drain zucchini

    Slice the zucchini in half lengthwise and then again, cut each half into half moons. In a medium bowl, toss the sliced zucchini with 1/2 tablespoon of garlic powder, ¾ teaspoon of kosher salt, to coat then place in a mesh strainer and drain the liquid over a bowl, for about 30 minutes. Toss a few times to help release the water.

    Once drained, transfer the zucchini to a plate lined with a double layer of paper towels, gently pat and squeeze out the liquid and then set aside for a little while, to dry.

    Preheat oven and prepare baking pan

    Preheat the oven to 475 °F, and lightly grease a pizza pan with cooking spray.

    Roll out 1 ball of pizza dough, evenly, onto the prepared pizza pan then lightly drizzle with some olive oil. Sprinkle with kosher salt and then evenly add the toppings, starting with 8 ounces of mozzarella cheese followed by 1/2 tablespoon of garlic powder, dried zucchini, tomato slices and 2 ounces of goat cheese. Finally, finish the pizza with a second drizzle of olive oil and a little more salt, to taste.

    Place the pizza pan on the lowest rack in the preheated oven and bake for about 10-15 minutes until the crust is golden brown and the cheese is melted and bubbling.

    Garnish with 1 tablespoon of chive slices and enjoy!
