This Breakfast Baked Potato Boat is a fun way of serving your weekend breakfast. Served inside the shells of baked potatoes, fill your boat with a fried egg, chopped garlic, thyme, butter, salt and lots of grated parmesan.
These are really fun to serve at kids birthday parties or family gatherings. Serving and presentation no longer has to be boring when you try this way!
To make Breakfast Baked Potato Boat, you will need the following ingredients:
Preheat oven to 350 °F.
Bake potato halves in the preheated oven for about 40 minutes until cooked and soft in the center.
Allow potatoes to cool then scoop out the soft insides and transfer to a mixing bowl.
Add parmesan, thyme, garlic, butter and salt and using a fork or potato masher, mash until well combined.
Spoon mashed potato mix into potato shells and press gently to indent into the edges.
Crack an egg into a bowl and then carefully slide over the potato, to top.
Bake in preheated oven at 350 °F for 20 minutes until the egg is cooked.
Remove from oven, serve and enjoy hot!
