To make this recipe, start by toasting baguette until golden brown. Combine peaches, basil, salt, and oil in a bowl. Make a dressing by whisking together honey, vinegar, and hot sauce in a separate bowl. To assemble the dish, take a piece of baguette and spread it with the goat cheese. Spoon some of the peach mixture on top and drizzle with hot honey dressing.
To make Bruschetta with Grape Tomatoes, you will need the following ingredients:
Heat 4 tablespoons of olive oil in a small skillet over medium-high heat. Sauté the garlic for about a minute. Remove from the heat before the garlic gets too brown. Transfer the sautéed garlic and oil to a mixing bowl and leave to cool slightly.
Place the red and yellow tomato halves in the bowl with the garlic oil. Add 1 tablespoon of balsamic vinegar and 16 basil leaves to the bowl. Season to taste with salt and pepper. Toss well to combine and add more basil or seasoning if required. Cover and chill in the refrigerator for 1-2 hours if you have the time.
Slice the baguette diagonally to allow for the largest surface area possible. In a large skillet, melt 4 tablespoons of butter.
Brush the baguette generously with melted butter on both sides. Grill until golden brown on both sides.
Repeat with the remaining 4 tablespoons butter and the other half of the baguette.
