This Cajun Chicken Pasta is a recipe for any home cook, from amateur to professional. Using simple ingredients and simple steps to make a less than simple flavored dish.
Get in your daily vegetable portion with a Mardi Gras color array of red and green bell peppers, mushrooms and green onions. I personally love Cajun spice and mixed with linguine pasta makes this pasta dish a golden celebration dinner!
To make Cajun Chicken Pasta, you will need the following ingredients:
Prepare pasta according to the package instructions.
Generously season both sides of chicken with sprinkles from 1 tablespoon of Cajun seasoning and 1 teaspoon of salt.
In a large nonstick skillet over medium-high heat, melt ¼ cup butter and saute chicken for about 5-6 minutes until done and no longer pink in the center. Remove chicken and set aside.
Return skillet to medium-high heat and add 2 thinly sliced red and green bell peppers, 1 package of mushrooms and 2 sliced green onions. Sauté for about 9-10 minutes until liquid evaporates and vegetables are cooked.
Return cooked chicken to the skillet along with 1½ cups of half & half, ½ teaspoon lemon pepper, ¼ teaspoon dried basil, ¼ teaspoon garlic powder and ¼ teaspoon salt. Over medium-low heat, cook, stirring often for about 3-4 minutes until heated through.
Add cooked linguine pasta and toss to coat in sauce.
Garnish with chopped green onions, if you wish, and serve!
