To make this salad, start by cooking pasta. Combine chicken, pineapple, celery, onions, grapes, and cranberries in a bowl and add the cooked pasta. To make the salad dressing, mix ranch dressing and mayonnaise. Dress the salad and cover and chill for at least an hour. Just before serving, stir in crunchy cashews.
To make my Cashew-Chicken Rotini Salad, you will need the following ingredients:
Cook the pasta in boiling water according to the package directions.
Mix 4 cups of cubed chicken, 1 can of pineapple tidbits, 1½ cups of sliced celery, ¾ cup of thinly sliced green onions, 1 cup each of seedless red and green grapes and 1 pack of dried cranberries together in a large salad bowl.
Remove pasta from the heat and drain. Add to the salad bowl with the ingredients.
Whisk 1 cup of ranch dressing and ¾ cup of mayonnaise in a small bowl. Pour the dressing over the salad and mix well.
Cover and chill in the refrigerator for at least 1 hour.
Stir through 2 cups of salted cashews before serving.
