1 ¼ cups Panko bread crumbs
1 cup Cheddar cheese shredded
1 Large eggs
½ cup Green onion finely chopped
2 tbsp Dill chopped
1 tsp Kosher Salt or to taste
1 tsp Garlic powder

Cheesy Garlic Zucchini Bites combine shredded zucchini with Cheddar cheese, green onions, fresh dill and are served with ranch dipping sauce for a scrumptious fun snack or summer appetizer. These baked bites are tender on the inside and crispy on the outside. They are like tater tots but made with beautiful summer zucchini and baked in the oven. Steps to make Cheesy Garlic Zucchini Bites


Preheat oven and prepare baking sheet

Preheat the oven to 400 °F and line a baking sheet with parchment paper.


Combine all ingredients


In a large bowl, mix together 2 cups shredded and patted dry zucchini, 1 ¼ cups panko bread crumbs, 1 cup shredded Cheddar cheese, 1 large egg, ½ a cup finely chopped green onion, 2 tablespoons chopped fresh dill, 1 teaspoon kosher salt and 1 teaspoon garlic powder.


Make balls


Using your hands, scoop out one tablespoon of the zucchini mixture at a time and roll into 30 separate balls and arrange on the prepared baking sheet.




Bake in the oven for about 30 minutes or until browned and crisp, flipping once halfway through.



Serve warm with ranch dipping sauce and enjoy!
