These Cheesy Zucchini Tots are one of my favorite things to make with my kids. I get them involved in every phase of the process and they absolutely love it. They have so much fun trying to squeeze every last drop of water out of the zucchini and mixing the ingredients together. I love that they enjoy being in the kitchen as much as I do! Do you cook with your kids?
To start, we drain the excess liquid from the zucchini by placing it in a clean dish towel and squeezing until very little water is left. To much water will lead to soggy tots. Then I mix all the ingredients together in a bowl and bake them in the oven until they are golden brown.
To make Cheesy Zucchini Tots, you will need the following ingredients:
Preheat the oven to 400 °F and spray a baking sheet with cooking spray.
Wrap the grated zucchini in a clean dish towel and squeeze out all the liquid.
Mix the zucchini, eggs, panko crumbs, salt, pepper, garlic powder and cheese together in a large bowl.
Drop spoonfuls of the tater mixture on the baking sheet.
Bake in the oven for 20-25 minutes until the tots are golden brown and cooked through.
Serve these with marinara sauce for dipping.
