To make the Chicken Breast with Tomatoes and Garlic, you will need the following ingredients:
Season 2 pounds chicken tenders with ½ teaspoon dried oregano, ½ teaspoon salt, and freshly ground black pepper to taste.
In a large pan or skillet over medium heat, heat 1 tablespoon oil of choice and add half of the seasoned chicken. Cook on both sides until golden brown, about 5 minutes. Remove and set aside. Cook remaining chicken and set aside too.
Add 1 more tablespoon oil if needed, reduce the heat to low, and add 5 chopped cloves garlic and ½ tsp dried oregano. Cook, stirring, for 1 minute.
Add 3 pounds sliced tomatoes, sprinkle with ¼ teaspoon salt and freshly ground black pepper to taste. Increase the heat to medium and cook, stirring gently, for 5 minutes. In case the tomatoes are not juicy enough, pour in some drops of water.
Turn off the heat and add the cooked chicken back to the skillet. Sprinkle with basil.
Serve hot with a side of choice and enjoy!
