Keeping things simple but delicious with this stovetop Chicken with Rice, Leeks and Mushrooms. It’s a family favorite dinner meal made easy in one pan. Pan-seared leeks and cremini mushrooms all cooked together with chicken breast and flavorful long-grain rice for an all-in-one dinner.   

Everything starts with the leeks and mushrooms, which are French-inspired and seasoned simple with dried thyme. Once the leeks and mushrooms have sautéed for 3-4 minutes, add the chicken, rice, and chicken broth. Season with salt and black pepper. Cover and cook until the liquid is absorbed and the rice is cooked. This easy recipe yields 4 servings and will take about 30 minutes of your time.

In a large skillet over medium heat, heat 1 tablespoon olive oil and add 2 sliced leeks and 8 ounces sliced mushrooms and sauté for 3-4 minutes.

Add1 teaspoon dried thyme or 2 teaspoons fresh, 1 pound chicken breast cut into bite sized pieces, 1 ½ cups long grain rice, 3 cups chicken broth, 1 teaspoon salt, and black pepper to taste.
