This Grilled Chicken Salad with Strawberries and Feta is a gorgeous and sweet, summer salad. Well marinated chicken in olive oil and vinegar, grilled to perfection and served on top of an arugula and red onion salad with sprinkled feta cheese and strawberries.
I don’t know a better tasting salad! It’s fresh and it’s different, incorporating all different flavors – tangy chicken, sweetness from the strawberries and salty feta cheese. You’ll love every bite.
To make Grilled Chicken Salad with Strawberries and Feta, you will need the following ingredients:
In a large zip-top plastic bag, combine 2 tablespoons oil, 2 tablespoons vinegar and the chicken and allow to sit and marinate for 10 minutes, rotating sides.
Remove the chicken from the marinade and sprinkle with ¼ teaspoon each of salt and pepper.
In a grill pan over medium-high heat, coat with cooking spray and add the chicken. Grill each side for 5 minutes, until the chicken is done. Once cooked, slice the chicken, evenly.
In a large bowl, whisk together 1 tablespoon olive oil, 1 tablespoon vinegar, ¼ teaspoon each salt and pepper, and sugar.
Add the strawberries and toss to coat well.
Add the arugula and onion and toss the salad lightly, to mix.
Prepare 4 serve plates and portion salad on each plate. Sprinkle with feta and chicken slices on top. Enjoy!
